Extraction method changes yield

Citrus yield varies with fruit type, cultivar, size, ripeness, storage, temperature, and extraction method.

A reamer, press, hand squeeze, and commercial extractor can produce different usable juice from the same case.

Fruit size and extraction vary

Zest yield should include only the colored outer layer when the recipe excludes bitter white pith.

Fruit variability

If both zest and juice are needed, zest clean fruit before cutting and juicing.

For purchasing, sample several fruits from the delivery instead of relying on a single unusually juicy specimen.

Strain and measure juice according to the recipe's pulp and seed standard.

Measure zest and juice separately

Keep citrus type, variety when known, average fruit size, sample count, extraction equipment, strained juice yield, and zest standard. Separate the two yields so a strong juice observation does not silently become a zest assumption.

For purchasing, sample fruit from more than one case position and avoid selecting only the largest. Average usable strained juice and properly removed zest. A press trial should use the same extraction endpoint expected in production.

Warm fruit and mechanical pressing may increase extraction, while aggressive zesting collects pith. Define acceptable technique before comparing yields so a higher number is not automatically called better.

A purchasing plan should also allow fruit reserved for garnish or presentation. Those pieces may yield little or no juice, so subtract them from the extraction count or plan garnish fruit separately rather than assuming every purchased fruit enters the press.
