Plan tortillas and filling separately
The filling result is a cooked, service-ready target. Raw meat, vegetables, or beans must be purchased with their own yield and cooking-loss factors.
Soft tortillas can tear, dry out, or be doubled. If routine service uses two tortillas per taco, treat that as a separate tortilla multiplier or double the taco count for packaging only.
A self-serve bar needs enough utensils and replenishment pans as well as food. Large containers can slow service and expose more product at once.
Complete the taco prep sheet with separate calculations to set marinade for the filling batch, convert filling to raw weight and check how far an ingredient will go.

Keep the tortilla allowance separate from the cooked filling and raw filling requirements.
What belongs on the taco prep sheet
Tortillas and filling now follow separate loss paths. The tortilla total includes doubling and damage; the prepared-raw filling uses cooking yield. Keeping those calculations apart prevents a tortilla breakage allowance from inflating meat or vegetable production.
The cooked grams per taco should come from an assembled sample using the actual spoon or scoop. A heaped self-service utensil may produce a different rate from a portion placed by kitchen staff.
Toppings can become the limiting ingredients even when tortillas and filling are sufficient. Build separate allowances for cheese, salsa, onions, herbs, and other components, especially where one topping is used in several menu items.
Reconcile filling and tortilla leftovers
Reconcile cooked filling, unused tortillas, opened tortilla packages, and topping shortages separately. A taco-bar total alone cannot show which component constrained service or created the surplus.
